2nd time around


This is my first blog... and probably my only :-)

I am back to get my second bachelors degree in nursing- *its not nearly as fun as my first bachelors degree!
hoping the next year isn't too bad!

love food, yoga, running, snowboarding- pretty much anything outdoors and active so if your interested i'll keep you posted :)

will be using this as my food diary (lots of different, healthy recipes) and my fitness diary *hopefully to keep me motivated*

Needed a quick meal tonight- in between studying…

I’m steaming haddock with lemon, olive oil, broccoli, carrots a little garlic, some carmalized onions (raw would totally work too) and salt and pepper! May make some brown rice to enjoy with it! I’ll let you know how it is…

Best Buddies Challenge

thinking about doing a 100 mile bike ride in June…. my fear is that I wont have enough time to train, and you have to raise $1500…. I know its a great cause… but thats a ton of money…. decisions decisions…

The end product! Eat with flax-seed totillas yummy!!!

Instead of canned fire- roasted tomatoes I roasted my own- split them in half and sprinkled a little evoo on them and roasted at 475 for about 40 min (did this first)

Also I couldn’t find the chilies she called for so I used chipolte chilies- which gave it a nice smokey flavor!

The avocado dip I changed completely- I used fat- free Greek yogurt and added fresh lemon juice and topped the chili with that and a little cheddar cheese!

cant wait to get back to my apartment…. for many reasons: 1. we have no heat right now in my parents house 2. to sleep in my bed 3. to walk around in my undies 4. to eat healthy again…. home does not do a body good!
